Celebration of Life

Yesterday we held a Celebration of Life ceremony for my grandmother. It was incredibly touching to see so many people come to pay tribute to Grandma. We held the ceremony at the Hudson Town Hall, where everything in the community is held :) 75-100 friends and family joined us. Sharon, Jennie's only daughter gave a very touching eulogy which we followed with a slideshow tribute. James made peanut brittle and coffee cookies, two of grandma's favorite recipes, to share with everyone. As Sharon said, it's amazing how many people have starts and plants that came from her garden. There are many "Jennie gardens" that will live on. You can view an "evaluation copy" of the slideshow below until I find a reasonably priced program to convert the monstrous powerpoint file to a movie.

Jennie’s Favorite recipes

Peanut Brittle

1c. White corn syrup

2c. Sugar

½ c. water

1 Tsp. Vanilla

½ lb. raw peanuts

2Tbsp. Butter

2 tsp. baking soda

½ tsp. Salt


Combine syrup, sugar & water in sauce pan. Bring slowly to 230o F. Add ½ lb. raw peanuts and continue to cook to 290o F (300o F at sea level). Remove from heat. Add butter, vanilla, soda & salt. Stir until blended. Pour into well-buttered pan. Cool – break into pieces.


Coffee Cookies

1 c. shortening

2 c. brown sugar

3 eggs

1 c. cold coffee

3 ½ c. Flour

1 tsp. baking soda

½ tsp. nutmeg

½ tsp. cloves

1 tsp. cinnamon

¼ tsp. salt

1 c. raisins

1 tsp. vanilla

½ c. nut meat

Cream shortening and sugar. Add eggs and coffee. Add rest of dry ingredients . Stir in nut meat, raisins and vanilla. Bake for 10-12 minutes at 350o F.
